Sweet Potato Chicken Stew

So it might be a little out of season with spring weather upon us, but this recipe is hearty and delicious!

Ingredients
1 sweet onion, diced
2 cloves garlic, mincedDSC02026
3 C broth
1x 14oz can petite-diced tomatoes, drained
1x 15oz can white beans, drained and rinsed
1 tsp smoked paprika*
2 medium sweet potatoes, peeled and cubed
2 C shredded chicken (roughly 2 breasts or 10 oz)
Salt and pepper to taste

Directions

In a large soup pot, cook the onions in olive oil for about 3 minutes, until translucent. Add the minced garlic and cook one minute longer.DSC02030

Add in the broth, tomatoes, beans, and paprika and bring to a boil.

Add in the sweet potatoes, reduce heat and simmer about 10 minutes until potatoes are tender.

To thicken the stew, scoop out one cup of the soup and puree in a blender then return the mix to the soup.

Add in the chicken and simmer until heated through. Season to taste with salt and pepper.

*This recipe calls for smoked paprika, which I didn’t have. I substituted smoked chipotle chili pepper instead. Tasty and it’s got a good kick!

Mexican Quinoa

Mexican Quinoa
1-2 jalapenos, seeded as desired (for less heat), dicedDSC02016
2 cloves garlic, minced
1 red onion, diced
1 can black beans, drained
1 can fire roasted tomatoes
1 C uncooked quinoa
1 C veggie brothDSC02015
1 C corn kernels
1 tsp chili powder
½ tsp cumin
Salt and pepper to taste
1 lime
1 avocado

Sautee the garlic, onion, and jalapenos until soft and fragrant, about 1-2 minutes

Add in the beans, tomatoes, quinoa, broth, corn, chili powder and cumin. Cover and simmer for 20-25 minutes, until the liquid is absorbed and quinoa is soft.

Stir in the juice from the lime.DSC02024

Top with avocado, cheese, etc., and serve!
