For a tasty treat topped with deliciously tart cream cheese frosting, these cupcakes rock! Not to be undertaken on a whim though – this recipe calls for a lot of zest, so preparation may take a bit longer than usual.
8oz package cream cheese, room temperature
½ C (1 stick) unsalted butter, room temperature
1 Tbsp key lime zest
½ tsp vanilla
2 C powdered sugar
1-2 Tbsp fresh key lime juice (as needed for consistency)
Cream together butter and sugar until light and fluffy, 1-2 minutes.
Beat in eggs one at a time until just combined.
Alternate adding in part of the flour, buttermilk, and remaining flour.
Divide batter into desired baking pan and bake at 350 until a toothpick inserted in the middle comes out clean (baking time depends on size of pan). Let cupcakes cool completely before frosting.
Add in key lime zest and vanilla, beat until just combined.
Add in powdered sugar.
If needed, add in fresh lime juice until frosting reaches desired consistency.
