Sprinkle Cake

Also known as funfetti cake, both titles are worthy of celebration! Or turning a regular day into a celebration.

½ C (1 stick) unsalted butter, softened
1 C sugar
1 large egg
2 egg whites
1 ½ C flour
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
2/3 C milk
1 ½ tsp vanilla
1/3 C rainbow sprinkles (or more!)


Whisk together flour, baking powder, baking soda, and salt.

Combine milk and vanilla.

Cream together the butter and sugar until light and fluffy.dsc03402

Add in egg and egg whites one at a time, mixing until just combined after each addition.

Add in half the flour mixture, mix, the milk mixture, mix, and the remaining flour mixture.

Fold in sprinkles gently with a spatula.dsc03404

Divide evenly into prepared cake pans and/or muffin tins, and bake at 325 until a toothpick inserted in the middle comes out clean (cooking times varies by size of pan).

Top with frosting, more sprinkles, and enjoy!
