Red Lentil Soup

For a quick and easy meal to enjoy as the temperature starts to drop, try this simple recipe! Delicious grains and great flavor make for a fabulous meal.

5 C broth (I used chicken broth)
1 C red lentils
1 large onion, chopped (I always prefer red!)
3 cloves garlic, minced
1 can (14.5oz) diced tomatoes
1 ½ tsp cumin
½ tsp chili powderdsc03170
1 tsp turmeric
¼ tsp salt
Pepper to taste


Combine broth and lentils in a large pot. Bring to a boil, then reduce heat and simmer for 10 minutes.

Cook onions over medium heat for 4-5 minutes, until soft and almost translucent. Add in garlic and cook 1 more minute.dsc03172

Add tomatoes (and their juices), spices, and onions to the lentils. Increase heat just a smidge to bring it back to a simmer.

Simmer 5 more minutes, or until lentils are soft.
