Pumpkin Pie Cake with Cream Cheese Frosting

Tis the season for all things pumpkin! Although I would argue that pumpkin is pretty much a year-round treat. This is a delicious and pretty quick recipe that brings out all those delicious pumpkin pie flavors with the light and fluffy texture of cake.

4 eggs
1 and 2/3 C sugar
1 C vegetable oil
1 can (15oz) pumpkin puree
2 C flour
2 tsp baking powder
1 tsp baking sodadsc03027
1 tsp salt
2 tsp cinnamon

6 oz cream cheese
6 Tbsp butter, softened
3 C powdered sugar
1 tsp pumpkin pie spice (optional)dsc03030

Sift together flour, baking powder, baking soda, salt and cinnamon.

Mix together eggs, sugar, oil and pumpkin.

Combine wet and dry ingredients, mixing thoroughly.

Bake at 350 for. Baking time varies for size of pan.dsc03034

Mix together all ingredients for frosting.

Spread on frosting generously.
