Lemon Cupcakes

Deliciously sweet with the perfect amount of lemon flavor! These cupcakes are dense, moist, and great for eating!

3 C flourdsc02711
½ tsp salt
1 C butter
2 C sugar
4 eggs
1 tsp vanilla
2 Tbsp lemon zest
1 C milkdsc02705
2 ½ Tbsp fresh lemon juice


Sift flour and salt together.

In a separate bowl, mix butter and sugar until light and fluffy. Beat in eggs one at a time, beating each until combined.dsc02718

Mix in vanilla and lemon zest.

Beat in flour mixture 1/3 at a time, alternating with half the milk and half the lemon juice between additions. Beat until just combined (do not over mix!).

Bake at 375 for 17 minutes.
