Couscous with Chickpeas and Roasted Red Peppers

Quick, delicious, and full of fun flavors!

1 ½ C whole wheat couscousDSC02413
1-2 carrots, thinly sliced
¼ tsp garlic salt
½ tsp salt
¼ tsp pepper
¼ C olive oil
1/3 C fresh lemon juice (1-2 lemons)DSC02418
1x 15oz can chickpeas
1/3 C pine nuts
1 C roasted red peppers, diced
1 C fresh mint, torn
1 C (4oz) crumbled feta


Cook couscous according to package directions.DSC02421

Stir olive oil and lemon juice into couscous. Add in chickpeas. Let cool slightly.

Toast pine nuts in a small skillet until fragrant and starting to brown (3-5 minutes). Add to couscous.

Gently fold in the roasted red pepper, crumbled feta, and mint leaves (get yourself a big bowl for this!).
