Strawberry Shortcake Cupcakes

A delicious cupcake, all the more so when strawberry season hits!

1 ½ C all-purpose flour
1 ½ C cake flour
1 Tbsp baking powder
½ tsp salt
1 C unsalted butter, softened
4 large eggs, room temperatureDSC02318
2 tsp vanilla
1 ¼ C milk
1 C (generously filled) finely diced strawberries

Directions

Sift together the flours, baking powder and salt.DSC02319

Cream butter and sugar together until light and fluffy.

Add eggs one at a time, beating until just mixed after each egg.

Add in vanilla.

Combine dry ingredients in three batches, alternating with the milk. Beat until just combined.DSC02324

Fold in strawberries.

Bake at 350 for 18-20 minutes.

You can top these with whipped cream, or I suggest adding some strawberries to a basic cream cheese frosting for a rich finish.
