Pound Cake Cupcakes with Chocolate Ganache

The mini version of these cupcakes is absolutely delicious, but be warned – this recipe makes a lot! I halved the original recipe (below), and still ended up with 4 dozen mini cupcakes.

Ingredients for CupcakesDSC02292
1 C butter, softened
2 ½ C sugar
6 eggs
3 C flour
1 tsp baking powder
1x 8oz container marscapone cheese
2 tsp vanilla

Ingredients for Ganache
2oz candy chips (chocolate, dark chocolate, white chocolate, etc.)DSC02301
½ C whipping cream
2 Tbsp butter, softened


Beat butter until soft and fluffy. Add sugar, mixing well.

Add eggs one at a time.DSC02305

Sift together flour and baking powder.

Mix in the flour mixture, alternating with marscapone cheese, starting and ending with flour. Mix well on low speed after each addition.

Add in 2 tsp vanilla until just combined.

Bake at 350 for 20-23 min (full-size) or 14-16 minutes (mini). Fill the muffin cups slightly fuller than usual to make it easier to top the cupcakes with ganache.DSC02310

Yield: 30 full-size cupcakes (maybe?) or a crap ton of mini cupcakes.

Ganache: Combine candy chips and whipping cream in a small bowl. Melt in the microwave, stirring frequently. Add in butter, and stir well. Dip the tops of the cupcakes in the ganache for an even coating. I recommend putting in a little extra effort to get fancy and do half dark chocolate, half white chocolate, and using the extra ganache as drizzle.
