Mexican Quinoa

Mexican Quinoa
1-2 jalapenos, seeded as desired (for less heat), dicedDSC02016
2 cloves garlic, minced
1 red onion, diced
1 can black beans, drained
1 can fire roasted tomatoes
1 C uncooked quinoa
1 C veggie brothDSC02015
1 C corn kernels
1 tsp chili powder
½ tsp cumin
Salt and pepper to taste
1 lime
1 avocado

Sautee the garlic, onion, and jalapenos until soft and fragrant, about 1-2 minutes

Add in the beans, tomatoes, quinoa, broth, corn, chili powder and cumin. Cover and simmer for 20-25 minutes, until the liquid is absorbed and quinoa is soft.

Stir in the juice from the lime.DSC02024

Top with avocado, cheese, etc., and serve!
