Basic combination, yet full of flavor! Feel free to sub in different veggies or herbs for a different taste.
Rice Bowl Ingredients
4 servings cooked brown rice
1 pound asparagus, trimmed into 1-inch pieces
8oz sliced mushrooms
3 Tbsp extra virgin olive oil
2 Tbsp chopped fresh basil (or herb of choice)
1 clove garlic, minced
½ tsp salt
¼ tsp red pepper
¼ tsp black pepper
Cook rice according to package directions so that you end up with roughly 4 servings.
Cook asparagus and mushrooms together in a large skillet, using olive oil, about 5 minutes or until tender. Set aside.
Whisk together dressing ingredients in a small bowl.
Cook eggs as desired (over medium is a pretty good choice!)
Divide ingredients among four servings, top with dressing, and sprinkle with parmesan cheese.
