Because cinnamon is the best! This recipe yields approximately 14 cupcakes (or 12 full-sized cupcakes and a couple mini cupcakes). Double it for more delight!
Cupcake Ingredients
¾ C all-purpose flour
¾ C cake flour
½ Tbsp baking powder
¼ tsp salt
½ Tbsp cinnamon
½ C (1 stick) unsalted butter
¾ C sugar
2 eggs, room temperature
1 tsp vanilla
½ C (plus a little more) milk
Cinnamon Sugar Topping
2 Tbsp melted butter
Cinnamon and sugar to taste
Cinnamon Cream Cheese Frosting
¼ C (1/2 stick) butter, softened
4 oz cream cheese, softened
¼ tsp vanilla
½ tsp cinnamon
2-1/2 C powdered sugar
Milk as needed (for texture)
Optional: cocoa powder to taste for chocolate frosting. For a full batch, use approximately 1/4 C
Directions for Cupcakes
Sif together the flour, baking powder, salt, and cinnamon
Cream butter and sugar until fluffy
Add the eggs one at a time, then add in the vanilla.
Add flour mixture in two or three parts, alternating with additions of milk, beating until combined after each addition
Fill cupcake liners ¾ full
Bake 20 minutes, then cool completely on wire racks
Brush the top of each cupcake with melted butter, then top with cinnamon sugar topping
Directions for Frosting
Beat butter and cream cheese until light
Mix in vanilla and cinnamon (and, optionally, cocoa powder). Add powdered sugar 1 cup at a time until all is incorporated
Add milk as needed to reach desired consistency.
