Smoky Black Bean Stew

Cooking oil
1 diced onion
1-2 thinly sliced carrots
2 cans (15oz) black beans, rinsed and drained
1 can (28oz) diced tomatoes
1-1/2 C vegetable broth
1 C sliced roasted red pepperDSC01870
1-2 chipotle peppers in adobo sauce (more for more heat), deseeded and diced
1 tsp dried thyme
1 tsp ground cumin
¼ tsp salt
¼ tsp black pepper
1 avocadoDSC01876
1 lime


Add the carrots and onions to a large pot over medium high heat, cook about 5 minutes or until tender.DSC01877

Add all other ingredients except for the lime and avocado. Bring to a boil, then reduce to a simmer over medium heat. Simmer for 15-20 minutes.

Squeeze fresh lime juice over the stew and top with avocado to serve.
