Strawberry Peach Guacamole

Peach season is arguably the best time of the year, and what better way to enjoy it than by incorporating peaches into everything? The sweetness from the peaches and strawberries offers an unexpected yet delicious contrast to the kick of the guacamole.

3 avocados
1 Tbsp lime juice
1 peach (½ for snacking, ½ for the recipe)
16-20 large strawberries (8-10 for snacking, 8-10 for the recipe)*
½ jalapeno, seeded and finely chopped
1 clove garlic, minced
½ tsp cumin
½ tsp cayenne pepper
½ tsp salt

Finely chop 8-10 strawberries, ½ peach, ½ jalapeno, and mince the clove of garlic. Set aside

Halve and seed the avocados, and put avocado pieces in a bowl with 1 Tbsp lime juice. Use a potato masher to turn the avocados into guacamole

Mix in the salt, cumin and cayenne pepper (feel free to use more cayenne pepper for more heat)

Fold in the strawberries, peach, jalapeno, and garlic

Let the guacamole sit for 1 hour at room temperature before serving

*For more conventional guacamole, substitute 1/2 onion for 1/2 peach, and 1-2 tomatoes for 8-10 strawberries
