Mini Quinoa Frittatas

Great little snack to start the day

 

2 C cooked quinoa (½ C uncooked)
2 eggs
2 egg whites
1 C shredded cheese
2ish C veggies (I typically use peppers, onions, and Rotel tomatoes)

Mix ingredients together in a bowl

Spray a mini muffin tin with non-stick cooking spray and spoon the mixture into the muffin cups (yield depends on how many veggies you use. This recipe usually gets me anywhere from 20-30 mini frittatas)

Cook at 350 for 15-18 minutes
