Banana Oatmeal Chocolate Chip Cookies

What’s the best solution for using that bananaDSC00735 that got a little bit too ripe and doesn’t look tasty after a run anymore? Turn it into cookies!

1 medium ripe banana
1/2 C packed brown sugar
1/4 C butter, softened
1/4 C sugar
1 tsp vanilla
2 Tbsp honey (optional – the original recipe doesn’t call for honey, but I love it)
1 large egg
1 1/4 C all-purpose flour
2 C old-fashioned oats
1 tsp baking soda
1/2 tsp salt
1/2 bag of chocolate chips

Combine the banana, brown sugar, butter, sugar, vanilla and honey, mix until smooth.

Add the egg and beat well (but not too much!)

Add in the dry ingredients, mix until blended. Stir in chocolate chips.

Bake at 350 for 10-14 minutes until golden brown (they may be a bit more on the brown side of golden brown, but no worries! They are still delicious).

With both oatmeal and a banana on the ingredient list, surely these cookies are the ideal pre-run snack? Or post-run recovery? Or both? Either way (or both ways), enjoy!
